But what about acrylamide? Could residual sugars be present?
Yes . Lactose could generate acrylamide above 120 Celsius , so use cheeses with zero or very small carbohydrate content (like mozzarella – Pizza!) . See product contents description . There are quite a number of low-carb cheeses around .
Do not add sugars (like figs , etc) during the heating process .
I suspect a linkage between acrylamide and the "melted cheese " argument .
But it might be true , (from basics or accidental) or untrue0 , (purely in my mind .)
More information is needed .
The problem is :
1. The "melted cheese" argument is about bacterial quorums .
An old system using very basic chemical messengers .
2.Acrylamide is about neuronal toxins , involving heating over 120 C . Much newer .
One way would be for acrylamide to interfere with the original chemical messengers . If some of these messengers had been roped into building axons , then we would have a connection .
But there is no evidence . It is stretching it , even for me .
But the possibility that such a simply produced compound as acrylamide can affect bacterial quorums should be vigorously pursued .
If it is true , there must be many others of the same class .
Apart from new classes of medicines and antibiotics , there is a strong possibility that many old ones (especially involving heating in the presence of sugars – and just about all cooking) can have unpredictable or deletrious effects .
